Here’s a basic steak bites recipe, this one based on one of the ubiquitous recipes on the Web.
This is super easy and delicious, but ensure that you’re using a good cut of steak. Otherwise it will turn out really tough. I’ve learned that the hard way over the years.
Careful with the garlic on this, if it scorches, it will ruin the dish.

What you’ll need
- 2 pounds thick-cut New York Strip or Ribeye steak, cut into 1-inch cubes
- Salt or kosher salt
- 1 stick (8T) unsalted butter
- Ground black pepper
- 4 cloves garlic, minced
- 0.25 cups fresh parsley leaves, chopped
What to do
Set your mise en place, having the pepper ready to sprinkle over the meat, and the garlic minced and ready to go. Pre-chop the parsley, too.
Bring the meat up to room temperature before cooking, and generously salt it.
Melt the butter in a large frypan over high heat, but not the highest setting, maybe 8 out of 10. Once the butter is melted in the pan and about 300 or so degrees (you can check with an infrared thermometer), add the meat, searing it until browned. Turn the pieces to sear on their opposite sides, for a total of about 8 minutes of searing.
When you’ve seared the meat to its desired doneness, reduce the heat to medium-high and sprinkle pepper over the meat. Add the garlic and cook it for a minute, being very sure to not let it scorch.
Remove the meat to a serving plate and garnish with the parsley. Serve hot.
