
Here’s a quick and easy recipe that tastes great. The secret to its outstanding flavor is the easily-made peanut-butter sauce.
This is based on an Epicurious recipe.
What you’ll need
- 12 oz. rice stick/Pad Thai noodles
- 0.25 cups smooth peanut butter (crunchy works, too)
- 0.25 cups soy sauce
- 2T rice vinegar or mirin
- 1T sugar (granulated, light brown or brown sugar all work)
- 1 – 3t crushed red pepper flakes (more flakes = more spiciness)
- 1 – 2T neutral oil
- 0.75 lbs. ground pork (ground beef or chicken works, too)
- 1″ piece of ginger, peeled and cut into matchsticks
- 4 garlic cloves, thinly sliced
- 6 – 8 oz. kale, torn into bitesize pieces (other types of greens work, too)
- 3T chopped peanuts
What to do
Cook the rice noodles per the package instructions. Rinse and set aside when they’re done cooking.
While the noodles are cooking, whisk the peanut butter, soy sauce, vinegar, sugar, red pepper flakes, and 1 cup water in a medium bowl. The sauce will look terrible, but it will be really good.
When the noodles are cooked, heat the oil in a wok or large frypan over medium-high heat. Cook the ground pork, breaking it up as it cooks, until it is pretty much cooked through. Add the ginger and garlic, cooking and stirring until the garlic has taken on some color—a few minutes. Don’t let it scorch, though.
Add the kale or whatever greens you’re using, cooking until it just becomes wilted, then add the sauce. Toss the noodles in the sauce while it is cooking off. When the sauce is reduced by about half, transfer the noodles to serving plates with tongs, sprinkle with chopped peanuts and serve hot.
