Secret Cookies that Aren’t So Secret

February 19, 2021 By Karl Leave a Comment

This recipe from Serious Eats makes for some good cookies. Why are they secret? No idea. No explanation was given.

For just a basic cookie, they sure are good!

What you’ll need:

  • 0.75 pounds salted butter, softened
  • 1.75 cups sugar
  • 2 egg yolks
  • 2t vanilla extract
  • 3.5 cups flour
  • Colored sugar (just use regular sugar if you don’t have any colored)

What to do:

Begin heating your oven to 350°F.

In a mixer fitted with a paddle attachment (or use a large bowl and hand-mixer), cream the butter and sugar. Next, add the yolks and vanilla, mixing well. Add the flour and thoroughly combine.

Use mounded teaspoonfuls to make balls of dough with your hands. Put them on an ungreased cookie sheet, then schmoosh each ball with the bottom of a glass dipped in colored sugar.

Bake for about 10 minutes (watch carefully—they burn easily) until the cookies are lightly golden just around the edges. When cooked, let them rest on the baking sheets for a few minutes so they can cool a bit. They’re really fragile when hot.

Carefully transfer to cooling racks after they’re not so hot.

Try not to eat them all at once.
