Spiced Chicken and Turnip Greens Lentils

I like to eat healthy, but I do not always have time to prep food that is wholesome. This recipe hit all the bases of convenience, health and flavor. I crave creamy sauces and this is one of the few “substitutes” that is fully satisfying. If you don’t tell your fellow diners that they are eating healthy, they would never guess! The other thing about this dish is that it draws together a number of my previous posts and yet is still entirely different from any of them.

Quick, easy, healthy and delicious.

Spiced-Chicken and Turnip Greens Lentils

Ingredients

Lentil Stew
1 Onion
3 Or 4 Carrots
3 or 4 cloves of garlic (minced)
EVOO
1 lb Lentils – pre-cooked
1 lb Tomatoes
1 T of Turmeric
Salt to taste
1 Bunch Turnip Greens (or your preferred greens)
1 T Rice-Wine Vinegar (or your preferred flavor)
1 Cup Non-Fat Natural Yogurt

Spiced Chicken
4 Chicken Thighs (skinned, de-boned and cut into chunks)
2 T of Soul Food Seasoning

 

Slice the carrots and onions.

Saute until softened – but not soft!

Meanwhile…

Put seasoning onto a container or bag.

And the chicken…

And shake to coat.

Add olive oil to a second pan and gently fry the spice-coated chicken. Be sure that your pan is large enough and your temperature hot enough to fry the chicken. If not, you will end up “sweating” the chicken. In other words, boiling it in the moisture that will come out of the meat. It will also take the spices with it and you will lose the flavor.

Meanwhile…

Add the garlic to the onions and carrot and saute for  a minute or two. Then add the tomatoes and turmeric.

Saute and let the mixture soften.

Once it gets to this stage, add salt to taste.

Add the yogurt and stir until blended.

Add the vinegar and stir until blended.

Add the turnip greens…

And then the lentils. These are actually yellow split-peas. Note that I have cooked them until very soft. They have held their shape, but will soon form part of the creamy sauce.

Lastly, add the chicken from the other pan, together with the oil and juices. Let this simmer for a few minutes until the flavors meld.

And serve!

It may look messy, but the whole thing will take you less than 30 minutes and the flavors and textures are truly impressive.
