People are intimidated by food that still resembles the original animal – or fish. Vegetarians often say that they don’t eat anything that has a face. Well now, you don’t get too much closer to the original animal than a whole fish. It is probably the eyes which people object to the most.
This tilapia has been processed. The innards have been removed and cleaned. The scales, even though it may not look like it, have been cleaned and the skin is smooth. Please note the price – $1.55 for the whole fish!
This method is infinitely variable. Pick your favorite spices, fresh or dry, and go for it.
Place herbs/spices into the cavity of the fish. In this instance I used Dill…
And garlic.
Cut deep slices into the flesh of both sides…
Place on a large piece of foil (you could also use parchment paper – en papillote) and add fresh salt and ground pepper.
Seal sides into an open bag.
And add a large “glug” of wine.
Seal and place on a baking sheet in a preheated 400 degree oven for 15-20 minutes.
Once you remove it from the oven, the only task left is to serve!
