Olive Oil Biscuits

These are just a basic drop biscuit. I made them huge because I wanted to be able to cut them in half and use them for egg sandwiches. Alas, they are too fragile for cutting in half, so if you make them, portion the dough into at least 12 biscuits instead of the six that I had made.

With all that said, they’re really good!

What you’ll need:

  • 240g (2 cups) all-purpose flour
  • 1T + 1t baking powder
  • 0.25t seasoned salt
  • 1t sugar
  • 0.75 cups milk, or for vegan, use coconut milk or milk alternative
  • 0.5 cups olive oil, plus extra for optional brushing

What to do:

Line a baking pan with parchment paper and heat your oven to 425 degrees F.

Add the flour, baking powder, sugar and salt to a large bowl and mix until well combined.

Add the milk and oil, stirring until the dough forms, then portion it onto the prepared baking sheet with a large spoon—make about 12 portions.

As an option, you can brush them with olive oil before baking, but for sure sprinkle a few grains of seasoned salt over the biscuits.

Bake for 13 minutes or until they’re slightly browned on top. Remove from the oven and allow them to cool on the baking pan.
