This bastardized recipe was mostly a failure. I tried to blend two fried chicken recipes, and I drastically failed on ensuring the batter was the right consistency. It didn’t taste bad or anything, it’s just that the batter was so thick that it didn’t adhere to the chicken and was not as crispy as it should have been. I also put in a tablespoon of baking soda into the flour mixture, which didn’t help, either.
If you use the original recipe found on allrecipes.com as shown below, the recipe should turn out fine, if not a little boring. One could be far more creative with the spices, including adding a couple of tablespoons of chili crisp to the batter.
What you’ll need
- Enough neutral oil for frying
- 4.33 cups all-purpose flour, divided
- 1.5T garlic salt
- 1T ground black pepper
- 1T paprika
- 0.5t poultry seasoning
- 1.5 cups beer, or as needed
- 2 egg yolks, beaten
- 1t salt
- 0.25t ground black pepper
- About 10 – 12 chicken wings
What to do
Begin heating the cooking oil in whatever vessel you’re using to 350 degrees F.
Mix 3 cups of the flour, garlic salt, 1T pepper, paprika, and poultry seasoning in a medium bowl.
Mix together in anther medium bowl the beer, the remaining 1.33 cups flour, egg yolks, salt, and the remaining 0.25t pepper. If the batter is too thick, add a little more beer to get it to the right consistency. The mistake I made with my recipe is that the batter was far too thick.
Moisten the chicken wings with a little water, then, in turn, dip them in the seasoned flour mixture. Shake off any excess flour and dip the wing into the batter, and again into the seasoned flour. Do this for one batch at a time, cooking between flouring and battering.
To cook, carefully lower a few chicken wings into the hot oil. Fry until crispy and well-browned, about 8 – 12 minutes. An instant-read thermometer inserted near the bone should read 165 degrees. When fully cooked, transfer the wings to a paper towel-lined plate to drain. Repeat until all the wings are cooked.
