Yup. This is an awesome minimalist pizza. What makes it so good? The combination of sauce and toppings.
Derivation from this pizza’s prescribed toppings is fine, but use a good crust and don’t overload it with toppings. Do that, and no matter what, it will turn out delicious.
Here’s a quick and easy dough recipe, if you’re looking for one. It’s not the best, but we like it at home, and my neighbor swears by them. They need to be pre-cooked, though, for this recipe to work.
What you’ll need:
- Pizza crust
- Mango or date chutney
- Gorgonzola cheese
- Fresh mozzarella cheese
- Good-quality thick, cooked bacon, cut into medium chunks
- Caramelized onions (optional)
What to do:
Preheat your oven to its highest temp.
Top the crust with the chutney, but not too thick.
Distribute toppings across the top, not overcrowding them (but don’t skimp on the bacon).
Bake until cheese is melted and the crust is crisp, 5-10 minutes, depending on your oven and the crust.
Let cool for a bit, slice, and dig in!
